No oil plant based Zucchini Bread

This past Sunday I made a treat for my family. Zucchinis are in season and I got bunch of them from my father-in-law. Some of them were used to make a no oil zucchini bread. Inspired by Angela from “Oh She Glows,” I made one loaf and was very happy with the result! It was very good. Here is my version of her recipe:

Ingredients:

  • 2 cups whole grain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/3 cup sorghum or molasses
  • 1/3 cup raisins
  • 1 hand full walnuts (chopped)
  • 2 cups shredded zucchini whole with skin
  • 1 tbsp lemon zest
  • 1/2 small lemon juiced
  • 1/2 – 1 cup water or non-dairy milk

Preheat oven to 350F. Combine all dry ingredients. Mix well. Add the rest. Mix well. Spoon the batter into loaf pan. Bake for 45 – 50 minutes. Let it cool down before serving – if you can wait! 🙂
